Fluffy Pancakes

These are much easier to create than they appear, and everyone enjoys them! Enhanced flavor when served with maple syrup or applesauce.

Serving Size: make 10-12 Pancakes Prep Time: 10 mins

Cook Time: 20 mins


Ingredients:


3/4 cup whole wheat pastry flour

3/4 cup unbleached white flour

1/3 cup fresh blueberries

1/2 cup sparkling water

1 cup ripe bananas, mashed

1 cup non-dairy milk

2 tsp baking powder

Dash Salt

1 tbsp aquafaba

1 tbsp lemon juice

1/2 cup pure maple syrup


Direction:


1- In a mixing dish, combine the flours, baking powder, aquafaba and salt. In a separate bowl, mash the bananas thoroughly. Mix lemon juice, non-dairy milk, and sparkling water into the bananas again. Stir to combine the wet and dry ingredients. Add the blueberries and mix well. Do not overmix the ingredients.


2- Over medium flame, heat a nonstick griddle. Pour 1/4 cup of the mixture onto a dry, hot griddle. When bubbles develop on the surface, flip and turn it over. Cook until both sides are golden brown. Rep till the entire combination has been used.
